flybystardancer | Muffin Experiments!

Okay, so I wanted to play around with substituting oat flour for regular flour, because it's healthy and easy to make yourself (just dump some oats into a blender--we have "old fashioned" oats). Well, Mom suggested making muffins, and using the applesauce we have in the fridge.

So I found this recipe online and figured that would be a good one to try. Most of the reviews are favorable, and I really liked the one that said they used more applesauce instead of the butter and they came out great. So I decided to do that with my muffins as well.

Only...we didn't have enough brown sugar! Oh no! So I looked up brown sugar substitutions (since brown sugar is just white sugar with molasses added back in), and got the ratio of 1 cup brown sugar = 1 cup white sugar + 1/4 cup molasses. Since I only needed 2/3 cup of brown sugar, I scaled it down to meet that.

Well, muffins just went into the oven, and my current impressions are... 1. It made 18 muffins, with me filling the cups more like 3/4 full. WTS. That is a 50% difference from the predicted amount. Even with the substitutions it shouldn't be that far off, should it? Luckily we have a second muffin pan (even though I don't really like it because it's silicone). Also? Waaaaaaay too much molasses. The molasses flavor was competing with the apples in the batter (who eats batter? Me? No way... ;) ), and I couldn't taste the cinnamon at all. Depending on how they turn out, though, I may try them again when I have more brown sugar. And more applesauce, considering I used up most of what we had.
