Aug. 17th, 2009 06:31 pmSo, milk had gone bad on us without us knowing. I found this out after I had started beef browning for a Hamburger Helper that called for milk. So dinner was switched instead to a one-pan meal based off of the filling for our favorite recipe for stuffed bell peppers.
Unstuffed Peppers
Ingredients:
1 lb. ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 16oz. can diced tomatoes
1 cup fresh cherry tomatoes
1 can whole kernel corn, drained
1/2 cup long grain rice
1/2 cup water
1 tsp salt
1 tsp Worcestershire sauce
Dash pepper
Directions:
Brown ground beef, onion, and bell pepper in a large skillet, then drain off fat. Add undrained canned tomatoes, cherry tomatoes, drained corn, rice, water, salt, Worcestershire sauce, and pepper. Bring to a boil, then cover and reduce heat to low. Simmer for 15-18 minutes until rice is tender.
Serves 6.
