Or woman, in this case. I have banana muffins cooling right now! :D I followed my grandma's recipe, only I left out the nuts because we don't have any on-hand. So instead I made half the recipe plain, and put 1/2 cup chocolate chips in the other half. Original recipe below!
Grandma's Banana Nut Muffins
Ingredients:
1/2 cup oil
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup mashed bananas (about 3 medium bananas)
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped nuts
Directions:
Beat together the oil and sugar. Beat in eggs and vanilla. Beat in bananas until well-mixed. In another bowl, combine the flour, baking powder, soda, and salt. Slowly beat the dry ingredients into the liquid ingredients until well-mixed. Stir in chopped nuts with a wooden spoon. Line muffin tins with paper cups and fill each one 2/3 full with batter. Bake at 375 degF for 18-20 minutes, or until a toothpick comes out clean.
Yield 14-18 muffins, depending on the size of the muffin tins.
...You know, I'm tempted to develop a banana muffin with peanut butter and chocolate chips... Mmmm, like those snacks we made in day camp where we put bananas, peanut butter, and chocolate wrapped in aluminum foil in the hot sand at the beach...
